So I ate the yummiest pumpkin cupcakes last night…I had to pass on the recipe! Emily thanks for the cupcakes and the recipe! (And the delicious dinner!)
Super Moist Pumpkin Cupcakes
Yellow cake mix
2/3 cup oil
4 eggs
2/3 cup sugar
½ tsp Nutmeg or pumpkin pie spice
1 tsp cinnamon
2 cups pumpkin (can)
Cook @ 350
For 9x13 35 -40 minutes
For cupcakes 20+ minutes
Yummy Cream Cheese Frosting
1 stick cream cheese
1 stick butter
4 cups powdered sugar
1 tsp vanilla
1-3 Tbsp milk (until it is the right consistency)
This are seriously the best cupcakes I’ve ever eaten!

Hey, I am a loser friend. You are always so thoughtful and good about remembering bdays and I forgot yours. I am so sorry and I hope you know we love ya and miss your fam greatly. Erin and I were just discussing the other day that we never do anything fun anymore. It is hard to plan things when our "LOL" is all but gone. So anyway, Happy Belated Birthday! You are a great gal in so many ways and you are very missed!
I am however still going to kill you for getting me into this PTA job! I am the WORST person in the world to do this job. Just Kidding...good thing I like you so much or I would have to come egg your house or something. Actually Lizzie would go for that in a second.
